You can cut it, dry it, use it in the kitchen, or just leave it sitting there looking pretty.Here’s what makes lavender even more compelling. A study in the journal Frontiers in Plant Science found that drought stress significantly impacted the quality and composition of lavender’s essential oil. Plants experiencing extreme water stress yielded more than double the oil of well-watered plants, and the drought-related changes were linked to more powerful antibacterial activity, particularly against bacteria that cause foodborne illness. In other words, the plant’s stress response makes it more potent. Lavender is a Mediterranean native and is pretty much designed for low-maintenance American summers.

It is heat and drought-tolerant and comes in a huge variety of colours and sizes. Late-season kinds, such as Autumn Joy, bloom in pink clusters and attract butterflies late into fall.
