The food safety guidance from the United States Department of Agriculture (USDA) says that cooked chicken can usually be safely stored in the fridge for three to four days if the temperature stays at 40°F (4°C) or below.The USDA Food Safety and Inspection Service says that this time limit applies to most cooked chicken dishes, like chicken that has been grilled, roasted, or used in soups or casseroles.The chance of bacteria growing goes up after the three to four day window. Food safety experts say that you should throw away leftovers that have been in the fridge for more than this amount of time.

Why cooked chicken cannot be stored for too long

Refrigeration slows down the growth of bacteria, but it doesn’t stop it completely. Some microorganisms can still grow slowly even when it’s cold.The Centers for Disease Control and Prevention (CDC) in the US say that bacteria that make people sick from food can grow in food that hasn’t been stored properly or has been in the fridge for too long.Some common bacteria that are found in poultry are:

  • Salmonella
  • Campylobacter
  • Clostridium perfringens

These bacteria are some of the most common causes of foodborne illness around the world. According to the CDC, contaminated food can sometimes appear normal, which means smell or taste alone may not reliably indicate whether the food is safe.

Proper ways to store cooked chicken in the fridge

  • Refrigerate within two hours

According to USDA food safety recommendations, cooked food should be placed in the refrigerator within two hours after cooking. If the surrounding temperature is above 90°F (32°C), the food should be refrigerated within one hour.You should keep cooked chicken in containers that are airtight or packaging that is tightly sealed.   • Maintain safe refrigerator temperatures

The US Food and Drug Administration (FDA) says that to slow down the growth of bacteria, refrigerators should be kept at 40°F (4°C) or lower.

But the USDA says that visible signs alone can’t always tell if food is safe. Experts say that if there is any doubt, you should throw away the food.

Can cooked chicken be frozen for longer storage

Freezing cooked chicken can make it last a lot longer in storage. The USDA says that cooked chicken can usually be stored in the freezer for two to six months without losing quality.At freezing temperatures, bacterial growth stops. However, freezing does not destroy all bacteria. Proper reheating is still required before consumption.

Why leftover chicken should be reheated properly

Another important step in keeping food safe is to reheat leftovers the right way. The USDA Food Safety and Inspection Service says that leftovers should be heated until they reach an internal temperature of 165°F (74°C).This temperature kills bacteria that may have grown while the food was stored.Food safety experts say you should use a food thermometer to check the temperature of leftovers before you eat them again.
