Bollywood legend Kareena Kapoor Khan recently declared her fondness for khichdi, calling it her absolute comfort food. Speaking at a wellness festival celebrating healthy living and traditional diets, Kareena revealed how the simple dish has a special place in her life and everyday diet.

“If I don’t have khichdi for two or three days, I actually miss it,” Kareena said, explaining that even in her glamorous career, much of what she eats continues to be simple. Her love for this comforting rice-and-lentil dish has created a spate of enthusiasm among admirers for nostalgic Indian fare that is healthful and familiar.

Khichdi: The Ultimate Soul Food

Khichdi, a staple in Indian households, combines rice and lentils in a nourishing blend that’s easy to digest and quick to prepare. Its adaptability makes it a beloved dish across various regions of India, each with its own twist. From masala khichdi in Gujarat to Bengali moong dal khichuri, the dish unites the country in its love for comforting meals.

Among these regional variations, the Garhwali Til Khichdi from Uttarakhand is notable for its distinctive flavor and nutritional value. Prepared using black sesame seeds (til) and urad dal, this variant provides a rich, earthy flavor while loading up on protein and minerals.

Recipe Highlight: Garhwali Til Khichdi

Ingredients:

  • 1 cup rice
  • 1/2 cup black urad dal
  • 2 tbsp ghee
  • 4 tbsp black sesame seeds
  • 1/2 tsp turmeric
  • 1 1/2 tsp cumin seeds
  • 1 tbsp ginger, chopped
  • 1 tbsp garlic, chopped
  • 2 green chilies, chopped
  • 1 tsp coriander seeds
  • 8-10 black peppercorns
  • 4 cloves
  • A pinch of hing (asafoetida)
  • Salt to taste

Preparation:

  1. Rice and urad dal should be soaked for 2 hours. Drain and cook.
  2. Dry roast cumin, coriander seeds, pepper, and cloves till they smell nice. Dry roast sesame seeds separately.
  3. Mix roasted spices and sesame with ginger, garlic, and chilies into a coarse paste.
  4. Heat ghee in a pressure cooker, add cumin and hing, and then the soaked grains.
  5. Add turmeric, salt, the prepared paste, and 3 cups of water. Mix well.
  6. Cook for 3-4 whistles and allow pressure to release naturally.
  7. Serve hot with curd, chutney, or papad.
